I am extremely lucky to live in York for a number of reasons, some being the beautiful medieval city and proximity to the Yorkshire Dales.
York is also a real destination for foodies, we have numerous delis and independent cafes/coffeehouses/restaurants/bistros. Another real bonus, especially in my own carb obsessed eyes, is the numerous artisan bakeries. Among one of the best is Via Vecchia, situated on the shambles (the street used as Diagon Alley in the Harry Potter films.)
This bakery is a bit of an enigma, it opens very early in the morning and shuts once it has sold out of the amazing selection of beautiful breads. This means that if you want to get some, you need to get there as early as possible and definitely before 12. However, I can sneakily tell you that The Hairy Fig Deli and Café , a lovely deli a few streets down, also sells Via Vecchia's bread, though it is a bit more expensive than getting it directly from the bakery.
This morning I was lucky enough to grab a slice of the action (haha...) from Via Vecchia before it shut and picked myself up a lovely cheese, ham and olive loaf. Now these breads are amazing on their own and I have often been known to eat a small loaf for lunch! Today though, I fancied doing something a bit different. It was bruschetta time! This is my version of the classic italian dish, which is a bit of a bruschetta/pizza hybrid.
This is such a simple recipe, I don't think it even needs to be laid out formally. All you need is a loaf of the best bread you can get your hands on, some tomato passata, mozzarella, olive oil and dried or fresh herbs (oregano/basil.)
Slice your bread up into large slices and place on a baking tray, I line mine with foil because after a long day, I was feeling a bit lazy. Judge if you will.
Spread a tablespoon of passatta on each piece, add some sliced mozzarella, top with fresh herbs and a drizzle of virgin olive oil. Place under the grill for about 5 minutes, until the bread is toasted and the mozzarella is melted. Then all that's left is to enjoy this quick and easy meal!
If you're feeling a bit adventurous, you could try adding some anchovies, sun blush tomatoes or olives. Actually pretty much anything you like!
